Calabrese Pesto Salad

Ingredients

  • 1 cup couscous or quinoa

  • 1 jar That’s Italy Calabrese Pesto

  • ½ cup roasted red peppers, chopped

  • ½ cup mozzarella cheese, cubed

  • 2 tbps Extra Virgin Olive Oil

  1. Cook couscous or quinoa according to package instructions. Let cool slightly
  2. In a large bowl, mix the cooked grains with Calabrese Pesto.
  3. Add roasted red peppers and mozzarella. Toss gently.
